Papa rellena
Ingredients :
- 1 kg of potatoes
- 500 g minced meat
- 4 eggs
- 100g of flour
- 2 tomatoes
- 1 clove of garlic
- 3 onions
- 6 black olives
- 1 tablespoon of paprika
- 1 tablespoon of coriander
- 1 tablespoon of parsley
- Oil, salt, pepper
Preparation :
- Boil the eggs and potatoes in water, mash the potato, add the flour and the rest of the eggs, salt and pepper.
- For the sutting :
- Cut the tomatoes into cubes.
- Cut the onion and garlic finely,
- Brown the onions and garlic in a pan, then add the tomatoes and meat.
- Cook for 10 minutes.
- Add the parsley, cilantro, black pepper, boiled egg cubes, olives, salt and pepper and cook for another 10 minutes.
- Take a small amount of mashed potatoes, then spread it in the palm of your hand, and put a little filling in the middle, tighten the sides and form an oval.
- Fry them in hot oil.
