Papa rellena

Ingredients :

  • 1 kg of potatoes
  • 500 g minced meat
  • 4 eggs
  • 100g of flour
  • 2 tomatoes
  • 1 clove of garlic
  • 3 onions
  • 6 black olives
  • 1 tablespoon of paprika
  • 1 tablespoon of coriander
  • 1 tablespoon of parsley
  • Oil, salt, pepper

Preparation :

  • Boil the eggs and potatoes in water, mash the potato, add the flour and the rest of the eggs, salt and pepper.
  • For the sutting :
  • Cut the tomatoes into cubes.
  • Cut the onion and garlic finely,
  • Brown the onions and garlic in a pan, then add the tomatoes and meat.
  • Cook for 10 minutes.
  • Add the parsley, cilantro, black pepper, boiled egg cubes, olives, salt and pepper and cook for another 10 minutes.
  • Take a small amount of mashed potatoes, then spread it in the palm of your hand, and put a little filling in the middle, tighten the sides and form an oval.
  • Fry them in hot oil.
